Everyone’s Favorite Snack

When you are trying to come up with an after-school snack that kids will enjoy, the possibilities are endless. But what if you want the snack to be healthy, gluten free, dairy free, high in protein, and easy enough for kids to make THEMSELVES? Now the choices become a bit more limited. That is why our No Bake Energy Bites are such a hit. Parents are excited to find a snack they can feel good about serving their family, and kids love to make (and eat!) them. Without needing an oven or sharp cooking knives, and with only a couple simple steps, kids can make the recipe with little or no supervision. Enjoy! And you may want to double the batch–parents have been known to bring them to work in their lunchboxes too…



    •       1 cup (dry) oatmeal (old-fashioned oats)

    •       1/2 cup peanut or almond butter

    •       1/2 cup ground flax seeds

            1/4 cup coconut flakes 

    •       1/2 cup semisweet dark chocolate chips

    •       1/3 cup honey 

    •       1 tablespoon chia seeds 

    •       1 teaspoon vanilla extract


    1       Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.*

    2      Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

    3      Makes about 20-25 balls.
