This is one Halloween “treat” we just can’t get enough of. Almonds, pistachios and sunflower seeds are all great, but who can resist the smell and salty crunch of roasted pumpkin seeds?! A perfect snack for work, school, or after a workout — and no risk of nut allergies.
A 1 oz serving has 5 g of protein, fiber, and healthy fats for only 140 calories. They are high in monounsaturated fat (the good kind!) so great to lower your cholesterol and balance your blood sugar. They are a delicious topping for salads, soups, and even pasta dishes.
Toss the seeds with olive oil, sea salt, and paprika. Roast for 30 minutes in a 350 degree oven, tossing them halfway through. Good thing I bought extra pumpkins this year!
